Tex-Mex Sweet Potatoes

Sweet potatoes are a great staple to have on hand. Cooking them in the oven isn’t the quickest thing of course, but the flavor is so much better so if you have the time, I always opt for baking them in the oven over putting them in the microwave. If you’re short on time though, just stick the pierced potatoes in the microwave for about 5-10 minutes or until soft.

Sweet potatoes are a great staple to have on hand. Cooking them in the oven isn't the quickest thing of course, but the flavor is so much better so if you have the time, I always opt for baking them in the oven over putting them in the microwave. If you're short on time though, just stick the pierced potatoes in the microwave for about 5-10 minutes or until soft.

Instructions

  1. Pre-heat oven to 400 degrees, pierce sweet potatoes multiple times with fork, brush with avocado oil, season with salt pepper, place on a foil-lined baking sheet and bake until soft (45 minutes to an hour)
  2. When potatoes have about 20 minutes left, start cooking the filling. Heat saute pan over a medium heat, add 1 tsp avocado oil, onions and bell peppers, cook for 5 minutes, add turkey and seasonings, cook until turkey is fully cooked. Add black beans and corn, cook for another couple minutes.
  3. When potatoes are done, cut them in half, add Tex-Mex filling, top with shredded cheese and avocado and enjoy!
