  1. Add 1 tsp avocado oil to a pan and cook chicken over a medium heat a few minutes until browned, flip and cook another few minutes until done.
  2. Shred chicken - set aside until ready to add to soup. . In a separate pan, cook onions and bell pepper over a medium heat until lightly browned.
  3. Add broth, shredded chicken, seasonings, green chile, garlic, and corn. Simmer for 15-20 minutes. Add cream and cheese, heat for another minute then serve.
  4. Great topped with avocado and green onions!
