Asian Quinoa Salad
This refreshing summer salad only takes a few ingredients and if you already have some cooked quinoa in the fridge (since it’s great for so many recipes) then this only takes a few minutes to throw together!
Add your favorite dressing or make the Thai Peanut Dressing below which I LOVE!
Ingredients
- 1 cup cooked quinoa
- 2 chopped Green onions
- 1 cup shelled edamame
- 2 cups cabbage chopped
- 3 thinly sliced Carrots (I used a vegetable peeler for thin strips)
- 1/4 cup Fresh Cilantro
Thai Peaunut Sauce
- 3 tbl peanut butter
- 2 tbl toasted sesame oil
- 2 tbl soy sauce
- 2 limes
- 2 cloves garlic
- 1 tsp sugar
- 1-2 tbl Water
Instructions
- Combine all veggies in a large bowl.
- For Thai Peanut Sauce: Blend all ingredients in a small bowl, add more water if consistency it too thick. Then add to salad and enjoy!!
