Asian Quinoa Salad

Asian Quinoa Salad

This refreshing summer salad only takes a few ingredients and if you already have some cooked quinoa in the fridge (since it’s great for so many recipes) then this only takes a few minutes to throw together! Add your favorite dressing or make the Thai Peanut Dressing below which I LOVE!
Servings 4 People

Ingredients
  

  • 1 cup cooked quinoa
  • 2 chopped Green onions
  • 1 cup shelled edamame
  • 2 cups cabbage chopped
  • 3 thinly sliced Carrots (I used a vegetable peeler for thin strips)
  • 1/4 cup Fresh Cilantro

Thai Peaunut Sauce

  • 3 tbl peanut butter
  • 2 tbl toasted sesame oil
  • 2 tbl soy sauce
  • 2 limes
  • 2 cloves garlic
  • 1 tsp sugar
  • 1-2 tbl Water

Instructions
 

  • Combine all veggies in a large bowl.
  • For Thai Peanut Sauce: Blend all ingredients in a small bowl, add more water if consistency it too thick. Then add to salad and enjoy!!
