Asian Turkey Stir-fry
This quick tasty recipe requires just a few key ingredients and you’ll have dinner on the table in no time! This also makes a great lunch for the week if you’re #mealprepping. Serve in cabbage cups for a great #lowcarb option.
Ingredients

- 1 diced orange bell pepper
- 1/2 diced Red onion
- 1 lb organic ground turkey
- 1 cup pre-shredded coleslaw mix
Sauce
- 2 tbl soy sauce
- 1 tbl toasted sesame oil
- 1 tsp avocado oil
- 2 cloves garlic crushed
- 1 tsp grated ginger (optional)
- 8 purple cabbage leaves (chose sturdy leaves you can use as cups)
- 8 romaine lettuce leaves
- 1/4 cup cashews chopped
- 2 diced Green onions
- small handful of shredded carrots
Instructions
- For the sauce: Combine all sauce ingredients in a small bowl and mix well.
- Add avocado oil to a pan, add onion and bell pepper, cook over a medium heat for 5 minutes. Next add ground turkey and coleslaw mix. Continue cooking until turkey is fully cooked.
- Add sauce to the pan and mix well to combine. Arrange cabbage cups on plates, add a lettuce leaf to each cup, then spoon in the turkey stir-fry. Top with cashews, green onions, and shredded carrots, then enjoy!
