Avocado Cucumber Salad with Garbanzos

This is a great salad to make for a quick lunch or a light dinner. It takes under 10 minutes to make and is full of flavorful veggies, healthy fats, and protein.

Ingredients
  

  • 1 avocado
  • 1 Tomato
  • 1/4 cup red onion
  • 1/2 cucumber
  • 1/3 cup Garbanzo beans
  • 1/4 cup chopped fresh parsley
  • 1 small handful of pepitas (optional)
  • 1 oz Feta Cheese (optional)

Dressing

  • 1 tsp olive oil
  • 1/2 tsp Red wine vinegar
  • 1/8 tsp oregano
  • 1/8 tsp garlic powder ?
  • Salt and pepper to taste

Instructions
 

  • Chop avocado, tomato, red onion, and cucumber. Toss with garbanzo beans. Whisk salad dressing ingredients together, mix into salad, and top with chopped parsley and fresh ground pepper. If desired add pepitas (pumpkin seeds) and/or feta cheese for a more filling salad.
