Bacon Broccoli Cheese Soup

This time of year, I’m always craving soups and stews. There’s something so comforting about a warm bowl of soup on a cold night. This one turned out pretty tasty!
Servings 4 People

Ingredients
  

  • 20 oz broccoli florets
  • 1 tsp olive oil
  • 1/2 diced Red onion
  • 3 cups Chicken broth
  • 1 tsp Herbs de Province
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 3 cloves crushed garlic
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 tsp crushed red pepper flakes
  • 3 strips cooked bacon cut into bite-size pieces
  • 2 cups half & half (or I used 1 cup plain unsweetened coconut milk and 1 cup heavy cream)
  • 1 cup Monterey Jack cheese shredded
  • 1 cup Parmesan cheese shredded

Instructions
 

  • Add oil to a pan. Sauté onion for 5 minutes over medium heat. Add broccoli, spices and broth. Simmer for 20 minutes. Add bacon, half and half and cheese. Cook until cheese is melted then serve!
