Blackened Mahi Mahi Bowl
Fish cooks SO quick so this is a SUPER FAST recipe, especially if you have some cooked quinoa on hand already from food prepping Sunday (see previous post). Loaded with veggies, proteins and YUMMY FLAVOR!!
Ingredients
- 1 Mahi Mahi filets
- 2 tsp avocado oil
- 1/2 Red onion
- 1 orange bell pepper
- 1 can Corn
- 1 can Black Beans
- 1 cup quinoa
- 1/8 tsp Garlic powder
- 1/8 tsp Onion powder
- 1/8 tsp smoked chipotle pepper
Toppings
- 1 diced Avocado
- 1 diced Tomato
- 2 chopped Green onions
- Cilantro
- Mexican cheese
Seasoning for Blackened Fish
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked chipotle pepper
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Salt & pepper
Instructions
- Heat pan over a medium heat, add 1 tsp avocado oil and red onion, sauté for 5 minutes, add bell pepper, corn, and spices, sauté for another few minutes until bell pepper is soft. Add black beans and quinoa, stir to combine, remove from heat and cover until ready to serve.
- Mix blackened fish seasoning together in a small bowl while the onions and peppers are cooking. Rub seasoning mix on mahi mahi (both sides). Use all the seasoning to thoroughly cover the fish. Once the quinoa/black bean mix is done cooking, heat up a new pan over medium heat with 1 tsp avocado oil. Add fish, cook a few minutes on each side until it flakes easily with a fork. Add the black bean & quiona mix to a bowl, top with shredded Mexican cheese, mahi mahi fillet, avocado, tomato, green onion and cilantro. Enjoy!
