Burrito Bowl

This is a super quick recipe with lots of protein and veggies. The enchilada sauce only takes a few minutes to mix together but you can always omit if you're really short on time and just top with salsa or hot sauce instead. Full of flavor either way!

Ingredients
  

  • 1 can Refried beans
  • 1 can Black Beans
  • 1 can corn
  • 1/2 cup Mexican Cheese shredded

Toppings:

  • Enchilada sauce see recipe below
  • Crushed Tortilla Chips
  • 2 Green onions chopped
  • 1 Tomato diced
  • 1 avocado diced
  • Cotija cheese
  • fresh ground black pepper

Enchilada Sauce

  • 1 tbl Butter
  • 2 1/2 tsp chili powder?
  • 1 1/2 tsp chipotle chili powder
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp Cayenne
  • 1/2 tsp Salt
  • 1 cup Water
  • 1 can Tomato sauce
  • 1 cube Vegetable bouillon optional

Instructions
 

  • Enchilada Sauce - Melt butter in a small pot, add in the dry seasonings, mix well and let heat for about a minute while stirring regularly so contents doesn’t burn. Add the water, stir and then the tomato sauce so it doesn’t splatter. Break apart bouillon cube into small pieces so it dissolves quickly and add it to the sauce. Let simmer for a few minutes, then it’s ready to serve.
  • Step 2: Assemble burrito bowls: Add half a can of refried beans, black beans, and corn to each bowl. Heat in microwave until warm. Stir in red onions and top with Mexican cheese. Microwave another 30 seconds or until cheese melts. Then add a layer of enchilada sauce, crushed tortilla chips, green onions, diced tomatoes, and avocado. Top with cotija cheese, cilantro, and freshly ground black pepper. Enjoy!
