Chicken Fajita Bowls
Yummy chicken fajitas with cilantro lime rice makes eating healthy all week seem like a treat. I just got done prepping these and the only problem is avoiding temptation to eat them right now!!
Ingredients
Fajita Seasoning
- 1 tsp chili powder
- 3/4 tsp cumin
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Oregano
- 1/4 tsp smoked paprika
- 1/4 tsp Salt
Main Ingredients
- 1 lb Organic Chicken cut into thin strips
- 1 sliced small red bell pepper
- 1 sliced small orange bell pepper
- 1 sliced yellow onion
- 1 cup long grain white rice
- 2 cups Water
- 1 cube vegetable bullion
- Small handful cilantro
- 1/2 Lime juiced
Instructions
- Fajita Seasoning: Combine all seasonings in a small bowl
- Combine rice, water, and bullion cube in a pot and bring to a simmer, let cook until rice is done. Next add the juice of half a lime and a handful of cilantro to the rice, mix well and set aside until ready to serve.
- While rice is cooking, heat a tsp of avocado oil in a large pan. Cook bell peppers and onions for about 7 minutes or until slightly browned. Next add chicken strips and fajita seasoning. Mix well and cook another 5 minutes or until chicken is done.
- Distribute rice and fajitas into 5 serving containers (I used a 3 cup size). Then enjoy all week.
