Crunchy Thai Peanut Salad

Yum yum!! I could eat this every day! Loaded with lots of crunchy veggies and protein-packed quinoa.
Servings 4 servings

Ingredients
  

  • 1 cup cooked quinoa
  • 1/2 red cabbage chopped
  • 2 thinly sliced Carrots (I use a vegetable peeler to make thin ribbons)
  • 1 cup sugar snap peas chopped
  • 1 handful Cilantro
  • 2 chopped Green onions
  • 1 yellow bell pepper thinly sliced

Thai Peanut Sauce

  • 3 tbl peanut butter
  • 2 tbl toasted sesame oil
  • 2 tbl soy sauce
  • 1 Lime
  • 1 clove garlic crushed
  • 1 tsp sugar
  • 1-2 tbl Water

Instructions
 

  • For the peanut sauce, whisk all ingredients together except the water, then stir in 1-2 tbl water to thin out the sauce until you reach the consistency you desire.
  • Combine all salad ingredients in a large salad bowl. Dish into individual salad bowls, top with dressing, and enjoy!
