Easy Crockpot Chicken & Veggie Soup
Fall is my FAVORITE season because it’s when I get to make all my favorite soups, stews, and warm comfort dishes (cookbook coming soon!!) And always full of tasty veggies of course!

And the crockpot is PERFECT for making it super EASY to have yummy food on the table with minimal effort.
Ingredients
Main Ingredients
- 1 lb organic boneless chicken thighs
- 1 chopped Zucchini
- 2 chopped Carrots
- 1/2 chopped Red onion
- 1 chopped orange bell pepper
- 1 cup Corn
- 1 cup chicken broth 1 can diced tomato
- 1 can Diced Tomatoes
- 2 tbl chili powder
- 1 tbl Oregano
- 1 tbl cumin
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp smoked paprika
- 1 tsp Smoked chipotle powder (add more if you like is spicier ??)
- 1/2 tsp Salt
- 2 cloves garlic crushed
Optional Toppings
- Mexican cheese
- Green onions
- Avocado
Instructions
- Add all the ingredients to the crockpot, mix and put on high for 4 hours or low for 6-8. I like to shred the chicken about an hour or two before serving so it can soak up the flavors more. Top with whatever fixings you love and enjoy!!
