Easy Crockpot Chicken & Veggie Soup

Fall is my FAVORITE season because it’s when I get to make all my favorite soups, stews, and warm comfort dishes (cookbook coming soon!!) And always full of tasty veggies of course! . And the crockpot is PERFECT for making it super EASY to have yummy food on the table with minimal effort.

Ingredients
  

Main Ingredients

  • 1 lb organic boneless chicken thighs
  • 1 chopped Zucchini
  • 2 chopped Carrots
  • 1/2 chopped Red onion
  • 1 chopped orange bell pepper
  • 1 cup Corn
  • 1 cup chicken broth 1 can diced tomato
  • 1 can Diced Tomatoes
  • 2 tbl chili powder
  • 1 tbl Oregano
  • 1 tbl cumin
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp smoked paprika
  • 1 tsp Smoked chipotle powder (add more if you like is spicier ??)
  • 1/2 tsp Salt
  • 2 cloves garlic crushed

Optional Toppings

  • Mexican cheese
  • Green onions
  • Avocado

Instructions
 

  • Add all the ingredients to the crockpot, mix and put on high for 4 hours or low for 6-8. I like to shred the chicken about an hour or two before serving so it can soak up the flavors more. Top with whatever fixings you love and enjoy!!
