Easy Homemade Ramen

Whenever I’m looking for a super quick meal because I don’t feel like cooking, THIS is my go-to. I used Lotus Foods organic millet and brown rice ramen noodles (get them here: Organic Brown Rice Ramen (12 Pack Per Bag)). It’s organic gluten free and takes just minutes to cook. And my favorite part of this recipe is the toasted sesame oil I drizzle on top. SO TASTY
Servings 2


  • 3 cups Water
  • 2 tbl spoon Red Miso Paste great for gut health
  • 1 Vegetable bouillon Cube
  • 1/2 cup shelled edamame organic preferred
  • 2 cups Fresh Spinach
  • 1 green onions – chopped
  • 4 packs Ramen Noodles
  • 1 tsp soy sauce
  • 1 tsp Roasted Sesame Oil


  • Bring water to a boil. Add miso paste, soy sauce and bouillon cube, mix until dissolved. Add ramen noodles, cook for about 3-5 minutes until soft. Remove from heat, add spinach and edamame to the pot. Let sit for a minute or two until spinach is wilted. Divide soup evenly between bowls, top with green onions, drizzle with toasted sesame oil and enjoy
