Keto Coconut Flour Pancakes

These are so good!! I make them as a weekend treat and my guy is always craving them. If you’re looking for a low-carb alternative to traditional pancakes, definitely give this one a try!!
Servings 4 People


  • 4 tbl coconut flour
  • 1/2 tsp liquid stevia
  • 1 1/2 tsp baking powder
  • 4 eggs
  • 4 oz cream cheese softened
  • 1/4 cup stevia-sweetened chocolate chips (optional) I use Lilly’s brand
  • Butter for the pan


  • Add all ingredients except chocolate chips to a food processor or blender and blend until all ingredients are combined. Stir in chocolate chips.
  • Melt some butter in a large pan or on a griddle. Pour batter into pan, I usually use a 1/4 measuring cup as my scoop. Cook for a few minutes until pancakes start to set, there won’t be bubbles like with traditional pancakes but you’ll be able to tell when they start firming up. Add more butter to the pan and flip pancakes. Cook for another few minutes until done. Then enjoy!
