  • 1 can Lentils
  • 1 cup Spinach
  • 1 cup Arugula
  • 1/2 Lemon
  • 1 hard boiled egg
  • salt/pepper/crushed red pepper


  • For this recipe, simply add a few handfuls of spinach, arugula, or dark leafy greens of your choice to a bowl, then add lentils, one sliced hard-boiled egg, then top with the juice of half a lemon, salt, pepper, and crushed red pepper to taste.
