Loaded Cauliflower Bake

This is a QUICK EASY side dish that’s low carb and full of FLAVOR!
Servings 2


  • 1 head cauliflower broken into florets
  • 3 slices bacon
  • 2 diced Green onions
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp Salt
  • 1/4 cup Shredded Mexican cheese


  • Preheat oven to 350 degrees.
  • Add bacon to a large pan and cook over medium heat until fully cooked. Remove from pan and once cool, crumble into bacon bits. Reserve bacon grease in pan for next step.
  • Using the same pan, add the cauliflower and spices. Sauté for about 10 minutes or until fork-tender, stirring occasionally.
  • Pour cauliflower into a baking dish, top with bacon and cheese, and bake for 10-15 minutes. Remove from oven, top with green onions and enjoy!
