Loaded Sweet Potato
I love sweet potatoes. They are a great staple around the house because they're hearty, filling, and they're a great source of vitamin A (beta-carotene) and many other vitamins/antioxidants. Plus you can make so many recipes with them as your base! The filling only takes about 15 minutes to make so you'll want to start baking the sweet potatoes at least 30 minutes before you start making the filling and potatoes are done about the same time.
Ingredients
- 2 large Sweet potatoes
- 1 tsp olive oil
- Salt & pepper
Filling:
- 1 tbl Butter
- 1 can Black Beans
- 1 whole Diced red onion
- 1 can corn
- 2 cloves garlic
- 1 tsp chipotle chili powder
- ½ tsp Cumin Powder
- ½ tsp Salt
Toppings:
- 1/4 cup Cilantro
- Cotija cheese
- 1 avocado
- Salt/pepper to taste
Instructions
- Pre-heat oven to 400 degrees, pierce sweet potatoes multiple times with fork, brush with olive oil, season with salt and pepper. Place on foil-lined baking sheet and bake until soft (45 minutes to 1 hour). When potatoes are almost done baking (about 15 minutes left), it’s time to create the filling.
- Melt butter in a pan, add diced onion and cook for about 5-10 minutes or until onions have browned slightly. Add more butter or olive oil if dry. Once onions are browned, add in the black beans, corn, garlic, chili powder, cumin, and salt. Mix well and let cook until heated through. When potatoes are done cooking, slice in half, add the filling, then top with avocado, cheese, cilantro, and salt/pepper to taste.
