Quick & Easy Veggie Soup
Love this recipe! If you’re looking for a quick way to add some extra veggies to your next dinner, this soup makes a great side dish.
Ingredients
- 2 tsp avocado oil
- 2 chopped Carrots
- 1/2 diced Red onion
- 2 chopped Celery Stalks
- 4 cups vegetable broth
- 1 chopped Zucchini
- 1 tbl Italian seasoning
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp basil
- 1/4 tsp crushed red pepper
- 2 cloves crushed garlic
- 1 can Diced Tomatoes
- 1 can red kidney beans drained
Instructions
- Heat oil in a medium soup pot. Add onion, carrots, and celery. Sauté for 5-7 minutes until slightly browned. Next add broth and remaining ingredients. Cover and simmer for 15-20 minutes. Serve topped with Parmesan cheese, if desired, and enjoy!
