Quick & Easy Veggie Soup

Love this recipe! If you’re looking for a quick way to add some extra veggies to your next dinner, this soup makes a great side dish.
Servings 4 People

Ingredients
  

  • 2 tsp avocado oil
  • 2 chopped Carrots
  • 1/2 diced Red onion
  • 2 chopped Celery Stalks
  • 4 cups vegetable broth
  • 1 chopped Zucchini
  • 1 tbl Italian seasoning
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp basil
  • 1/4 tsp crushed red pepper
  • 2 cloves crushed garlic
  • 1 can Diced Tomatoes
  • 1 can red kidney beans drained

Instructions
 

  • Heat oil in a medium soup pot. Add onion, carrots, and celery. Sauté for 5-7 minutes until slightly browned. Next add broth and remaining ingredients. Cover and simmer for 15-20 minutes. Serve topped with Parmesan cheese, if desired, and enjoy!
