Roasted Veggie Pasta

When you're craving pasta (one of my weaknesses for sure!! ????) find recipes that are loaded with veggies so you're at least getting some extra nutrients in ?? Roasted veggies are an awesome way to add a TON of FLAVOR to your dish. I used one pan to roast the veggies and sausage which means easy clean up ?? And if you're going vegetarian, this is just as good without the sausage ??
Servings 4


  • 1 cup broccoli chopped
  • 1/2 Red onion sliced
  • 1 orange bell pepper sliced
  • 8oz uncooked pasta
  • 2 Garlic Cloves
  • 2 tsp avocado oil
  • 1 tsp Butter
  • 2 Italian organic chicken sausages sliced

Seasonings (add to taste)

  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Salt
  • pepper


  • Preheat oven to 475 degrees. Add chopped veggies to a large baking sheet, drizzle with 1 tsp avocado oil, then sprinkle with seasoning. Roast in the oven for about 10 minutes, then add sausages, mix well and put back in the oven for another 10 minutes or until everything looks slightly brown.
  • While veggies are cooking bring a pot of water to boil, add pasta, once cooked, drain and rinse with water. Add pasta back to the pot with 1 tsp butter and 1 tsp avocado oil (or 2 tsp of avocado oil...I just like a little butter with my pasta ??) and 2 crushed garlic cloves. Mix well.
  • When veggies are ready, scoop pasta into a bowl, add veggies and sausage, then enjoy! ????
