Shrimp & Veggie Stir Fry

This QUICK TASTY dish works GREAT with my homemade peanut sauce! .Just throw your favorite veggies in sauté pan with some shrimp or scallops. Top with peanut sauce and enjoy! 
Servings 4

Ingredients
  

  • 1/2 diced white onion
  • 1 diced orange bell pepper
  • 12 oz cauliflower rice
  • 2 cups broccoli florets
  • 1 sliced carrot
  • 1 sliced yellow zucchini
  • Wild caught shrimp and/or scallops
  • 2 tsp avocado oil

Peanut Sauce

  • 3 tbl peanut butter
  • 2 tbl toasted sesame oil
  • 2 tbl soy sauce
  • 1 Lime
  • 2 cloves garlic crushed
  • 1-2 tbl Water

Instructions
 

  • For Peanut Sauce: Whisk all ingredients together into a sauce.
  • For the veggies, start by sautéing the onion for a couple minutes in oil, then add the remaining veggies, cook until fork-tender.
  • Next sauté shrimp and/or scallops in a separate pan and cook until done.
  • Add veggies to serving bowls, top with shrimp, scallops, sauce and dig in
