Spring Veggie Pasta

This is a super tasty pasta dish loaded with veggies. I used Trader Joe's rice pasta for this recipe. I've tried a bunch of wheat alternative pastas and this is the best I've found which is gluten free AND tastes as close to wheat pasta as you're gonna get 😉

  • 16 oz Brown rice penne pasta
  • 1 cup Frozen Peas
  • 1 cup Frozen Spinach
  • 1/2 Red Bell Pepper (diced)
  • 1/2 Yellow Bell Pepper (diced)
  • 1/2 red onion -diced
  • 1 tsp Italian seasoning
  • 2 tsp avocado oil
  • 3 cloves garlic
  • fresh parsley
  • Parmesan cheese


  • Boil a pot of water and cook pasta until done.
  • While pasta is cooking, heat a tsp of avocado or olive oil in a large sauté pan, add onions and bell peppers. Cook until soft and slightly browned. Add spinach, peas, garlic, and seasoning. Continue cooking until heated through. You want the veggies to be a little saucy so if too dry, add a little water to the pan. Mix pasta into the veggies, top with fresh parsley, a little Parmesan cheese and enjoy!
