Teriyaki Mahi Mahi Bowl

This is a QUICK and SUPER flavorful meal! Mahi Mahi is a very mild white fish and this marinade goes GREAT with it, so if you have anyone in your family who's not super excited about fish, try this recipe to win them over!

Ingredients
  

Marinade

  • 4 Mahi Mahi fillets
  • 3 tbl Balsamic vinegar
  • 3 tbl honey
  • 3 tbl soy sauce
  • 2 Garlic Cloves crushed
  • 2 tsp olive or avocado oil

Veggies

  • 1/2 Red onion chopped
  • 1 Red bell pepper chopped
  • 1 Zucchini chopped
  • 1/2 cup Pineapple chopped
  • 1 tsp avocado oil
  • Salt & Pepper to taste
  • 2 cups Cooked Rice
  • 2 Green onions sliced

Instructions
 

  • Add all marinade ingredients to a shallow dish, mix to combine, then add fish, coat both sides of the Mahi Mahi with the marinade. Put in fridge and let marinate while you work on chopping the veggies.
  • Add red onion to a pan with a teaspoon of avocado oil, saute for 5 minutes, then add the rest of the veggies and pineapple, cook for another 5 minutes until browned. Season with salt/pepper.
  • Heat another pan over a medium heat, add fish and a few teaspoons of the marinade. Cook for about 4 minutes, then flip fillets, add the rest of the marinade and cook for another few minutes until done.
  • Serve veggies and Mahi Mahi on top of a bed of rice. Top with the extra marinate left in the pan and sliced green onions. Enjoy!
