Teriyaki Mahi Mahi w/Mango Salsa
The mango salsa is SO YUMMY, I could eat it just by itself!
You are going to LOVE all the flavors going on in this dish!
Ingredients
Main Ingredient
- 4 Mahi Mahi fillets
Marinade
- 3 tbl Balsamic vinegar
- 3 tbl honey
- 3 tbl soy sauce
- 2 cloves garlic crushed
- 2 tsp olive or avocado oil
Mango Salsa
- 2 diced mangoes
- 1 diced green onion
- 1/2 diced Red bell pepper
- 1/8 diced Red onion
- Salt/pepper and crushed red pepper to taste
- 1/2 Lime juiced
Instructions
- Add all marinade ingredients to a shallow dish, mix to combine, then add fish, coat both sides of the Mahi Mahi with the marinade. Put in fridge and let marinate while you make the mango salsa.
- Chop up the mangos and veggies, add lime juice, and salt/pepper to taste. Sprinkle in some crushed red pepper for spice.
- Heat a pan over a medium heat, add fish and a few teaspoons of the marinade. Cook for about 4 minutes, then flip fillets, add the rest of the marinade and cook for another few minutes until done.
- Top fish with mango salsa and add your favorite veggie side. For me that’s usually Brussels sprouts or asparagus! Yum!
