Tex-mex Bowl
Since it’s #TacoTuesday and all thought you might enjoy this tasty recipe! Basically a taco in a bowl!
Ingredients
- 1/2 cup shredded carrots
- 1/2 diced Red onion
- 1 diced bell pepper
- 1 lb organic ground turkey
- 1/2 cup organic corn?
- 12 oz riced cauliflower
- 2 tsp avocado oil
Seasoning
- 1/2 tbl chili powder
- 1/2 tsp smoked chipotle
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp Salt & pepper
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp Onion powder
Optional Toppings
- Cilantro
- Cheese
- Green onions
- Avocado
Instructions
- Sauté carrots, onion, and bell pepper in 2 tsp avocado oil over medium heat. Once soft (5-7 mins), add cauliflower rice, turkey, corn, and seasonings.
- Mix well and continue stirring occasionally until turkey is fully cooked. Spoon into bowls, top with desired toppings and enjoy!
