Tex-Mex Quinoa
I love quinoa! It can be used in so many different recipes. It's a great superfood with tons of nutrients, lots of protein to keep you full longer, and you can make a big batch at the start of the week and use it in different recipes throughout the week.
Ingredients
- 1 cup cooked quinoa
- 1 tsp avocado oil (or olive oil)
- 1/2 red onion diced
- 1 bell pepper diced
- 1 jalapeno diced
- 1 can pinto beans drained and rinsed
- 1 cup corn
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Toppings:
- 2 Green onions chopped
- 1 oz Cotija cheese
- 1/4 cup Cilantro chopped
- Salt/pepper to taste
Dressing
- 2 limes juiced
- 1/2 tsp Salt
- 1 tsp cumin
- 1 tsp chili powder
Instructions
- For the dressing, add all ingredients to a small bowl, whisk to combine. Set aside for right before serving.
- Heat avocado oil in a sauté pan to a medium heat, add onion and sauté until onions are slightly browned (about 5 minutes), add bell pepper, and jalapeno, cook for another 5 minutes until veggies are soft and slightly browned. Add pinto beans, corn, cooked quinoa, garlic powder, onion powder, and dressing. Stir to combine and cook until heated through (about 1-2 mins). Spoon quinoa mix into individual serving bowls, add toppings, and enjoy!
