Tex-Mex Quinoa

Tex-Mex Quinoa

I love quinoa! It can be used in so many different recipes. It's a great superfood with tons of nutrients, lots of protein to keep you full longer, and you can make a big batch at the start of the week and use it in different recipes throughout the week.

Ingredients
  

  • 1 cup cooked quinoa
  • 1 tsp avocado oil (or olive oil)
  • 1/2 red onion diced
  • 1 bell pepper diced
  • 1 jalapeno diced
  • 1 can pinto beans drained and rinsed
  • 1 cup corn
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Toppings:

  • 2 Green onions chopped
  • 1 oz Cotija cheese
  • 1/4 cup Cilantro chopped
  • Salt/pepper to taste

Dressing

  • 2 limes juiced
  • 1/2 tsp Salt
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions
 

  • For the dressing, add all ingredients to a small bowl, whisk to combine. Set aside for right before serving.
  • Heat avocado oil in a sauté pan to a medium heat, add onion and sauté until onions are slightly browned (about 5 minutes), add bell pepper, and jalapeno, cook for another 5 minutes until veggies are soft and slightly browned. Add pinto beans, corn, cooked quinoa, garlic powder, onion powder, and dressing. Stir to combine and cook until heated through (about 1-2 mins). Spoon quinoa mix into individual serving bowls, add toppings, and enjoy!
