Tex-Mex Sweet Potatoes
Sweet potatoes are a great staple to have on hand. Cooking them in the oven isn't the quickest thing of course, but the flavor is so much better so if you have the time, I always opt for baking them in the oven over putting them in the microwave. If you're short on time though, just stick the pierced potatoes in the microwave for about 5-10 minutes or until soft.
Ingredients
- 1 tsp Avocado Oil
- 1 lbs Organic Ground Turkey
- 2 Sweet Potatoes
- 1/2 Red Onion diced
- 1 Orange Bell Pepper diced
- 1 can Black Beans
- 1 can Corn
- 1/2 tsp Salt
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Chipotle Powder
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
Toppings
- Avocado
- Cilantro
- Mexican Cheese
Instructions
- Pre-heat oven to 400 degrees, pierce sweet potatoes multiple times with fork, brush with avocado oil, season with salt pepper, place on a foil-lined baking sheet and bake until soft (45 minutes to an hour)
- When potatoes have about 20 minutes left, start cooking the filling. Heat saute pan over a medium heat, add 1 tsp avocado oil, onions and bell peppers, cook for 5 minutes, add turkey and seasonings, cook until turkey is fully cooked. Add black beans and corn, cook for another couple minutes.
- When potatoes are done, cut them in half, add Tex-Mex filling, top with shredded cheese and avocado and enjoy!
