Tomato Avocado Salad
This salad only requires only a few ingredients and the flavors go so well together. I find myself reaching for this as my go-to quick recipe whenever I have ripe avocados on hand. If you're looking for a dairy-free option, omit the Parmesan cheese. Great salad either way!
Ingredients
- 1 avocado -diced
- 2 tomatoes -diced
- ¼ red onion -sliced
- 1 oz Parmesan cheese (optional)
Dressing:
- 1 tsp olive oil
- 1/2 tsp Red wine vinegar
- 1/8 tsp oregano
- 1/8 tsp Herbs de Province (you can substitute with dried basil)
- Salt and pepper to taste
Instructions
- Add diced avocado, tomato, and red onion to a bowl. Whisk olive oil, red wine vinegar, and seasonings together in a small bowl. Pour over salad, top with Parmesan cheese if desired.
