Tortellini soup

When you’re craving comfort food like cheesy pasta at least load it with lots of veggies to fill you up with less calories. This is one of my comfort food go-tos! So many yummy flavors and just a few simple steps to make!
Servings 4 servings


  • 4 diced Carrots
  • 3 diced Celery Stalks
  • 1 diced small white onion
  • 4 cups chicken or vegetable broth
  • 2 cups Water
  • 1 baby bok choy
  • 2 cloves garlic crushed
  • 1 tsp basil
  • 1/2 tsp Oregano
  • 1/2 tsp Salt
  • 1/4 tsp ground pepper
  • 8 oz Cheese tortellini
  • 1/4 cup sun dried tomatoes in oil
  • 1 tsp avocado oil
  • fresh parsley


  • Add onion, carrots, bok choy and celery to a sauté pan with a tsp avocado oil, cook for about 7-10 minutes until veggies are soft. Add broth, water, seasoning, sun dried tomatoes, and tortellini. Cook for another 5 minutes until tortellini floats to the top. Then dish into bowls, top with fresh parsley and enjoy!
