Turkey Cauliflower Rice Skillet

This was a quick dinner I threw together the other night that turned out SO yummy!! Lots of flavors and veggies! 
Servings 4 People

Ingredients
  

Main Ingredients

  • 1/2 diced Red onion
  • 1/2 diced orange bell pepper
  • 1/2 cup Organic corn
  • 1/2 diced Zucchini
  • 1 lb organic ground turkey
  • 2 cups riced cauliflower (I use frozen organic riced cauliflower from Costco - Super Quick!)
  • 2 tsp avocado oil

Toppings

  • 1 diced Avocado
  • 2 diced Green onions
  • 1 tomato diced

Spices

  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Chipotle Powder
  • 1/2 tsp Salt
  • 1/4 tsp ground black pepper
  • 1 clove crushed garlic
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 tsp Oregano

Instructions
 

  • Heat oil in a large pan over a medium heat, sauté onions and bell pepper for 5 minutes. Then add corn and zucchini and cook for another few minutes. Next add riced cauliflower and spices. Add a little more water or oil if dry.
  • Cook turkey in a separate pan at the same time. Mix cooked turkey in with veggies. Serve topped with green onions, diced tomatoes, avocado, and cheese if desired. Enjoy!
