Turkey Quinoa Skillet

Just a few key ingredients and lots of yummy spices in this awesome dish! Makes great leftovers too!

Main Ingredients

  • 1 lb organic ground turkey
  • 1 diced yellow bell pepper
  • 1 diced yellow onion
  • 1 can Organic corn
  • 1 can Diced Tomatoes
  • 1 can Black Beans
  • 1/2 cup uncooked quinoa
  • 1 cube vegetable bullion (optional)


  • 2 cloves garlic
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Oregano
  • 1/4 tsp Salt
  • 1/4 tsp pepper

Optional Toppings

  • Avocado
  • Cilantro
  • Green onions
  • Mexican cheese


  • Bring 1 cup of water to boil with the bullion cube, add quinoa, cover and cook for about 15 minutes or until done, set aside.
  • While quinoa is cooking, heat up a large sautéte pan with 1 tsp avocado oil, then add bell pepper and onion, cook for about 10 minutes or until slightly browned. Next add the turkey and all seasonings. Cook for another 7 minutes until cooked through. Next add black beans, corn, diced tomatoes, and cooked quinoa. Mix well and serve! Top with cilantro, avocado, green onions and Mexican cheese. Yum!!!
