Turkey Sweet Potato Hash
This is a hearty recipe that will fill you up without weighing you down. This recipe serves 4 and makes great leftovers so if your family doesn't eat it all on the first night, it will be just as good the next day! It requires minimal ingredients and is full of flavor from the seasonings and sauteed veggies. Yum!
Ingredients
- 2 Sweet potatoes diced
- 1 lb ground turkey organic preferred
- 1 red onion diced
- 1 Red bell pepper diced
- 4 cloves garlic crushed
- 2 tsp olive oil or avocado oil for roasting sweet potatoes and cooking turkey
Sweet Potato Seasoning:
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried basil
- 1/4 tsp crushed red pepper flakes
- Salt/pepper to taste
Turkey Seasoning:
- 1/2 tsp Salt
- 1/4 tsp crushed red pepper flakes
- 1 tsp dried basil
- 1/4 tsp ground black pepper
Toppings:
- fresh parsley chopped
- Mozzarella or Parmesan cheese optional
Instructions
- Preheat oven to 425 degrees. Add diced sweet potatoes to a foil-lined baking sheet.
- Drizzle with 1 tsp olive oil, mix to coat sweet potatoes. Make sure sweet potatoes are spread out in the pan without any stacked on top of each other so they cook evenly.
- Season with salt, pepper, garlic powder, onion powder, dried basil, and crushed red pepper. Roast in the oven for about 20 minutes or until soft and slightly golden (stir once halfway through cooking).
- While the sweet potatoes are roasting: Preheat large sauté pan to a medium heat, add 1 tsp olive or avocado oil to coat the pan.
- Add onion - sauté for about 6 minutes or until translucent and slightly browned.
- Add bell pepper - cook for another 3-4 minutes until soft.
- Add ground turkey, salt, crushed red pepper, basil, and ground black pepper. Continue to cook, stirring occasionally, until turkey is fully cooked and crumbled (about 7 minutes).
- Right before turning off the heat, add 4 cloves crushed garlic and stir constantly for about a minute so you don’t burn the garlic, then take the pan off the heat and cover until ready to serve.
- Serve by layering sweet potatoes in a bowl, then add turkey mixture, top with mozzarella or Parmesan cheese (optional), fresh chopped parsley, and freshly ground black pepper. Then enjoy!
