Turkey Taco Salad with Smoked Chipotle Dressing

  • 1 head romaine lettuce chopped
  • 2 tomatoes diced
  • 1 yellow bell pepper diced
  • 1/2 cucumber sliced
  • 1 small white onion diced
  • 1 cup corn
  • 3 Green onions chopped
  • 1 lb organic ground turkey
  • 1 packet organic taco seasoning

Optional add-ons

  • 1/3 cup Cilantro
  • 1 avocado
  • shredded Mexican cheese or Cotija cheese

Smoked Chipotle Dressing:

  • 1/2 cup avocado oil
  • 1/8 cup apple cider vinegar
  • 5 tsp chili powder
  • 1 tsp chipotle chili powder
  • 1 tsp Salt
  • 1/4 tsp black pepper
  • 1 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder


  • Combine all dressing ingredients in a small bowl, mix well before serving.
  • Mix the taco seasoning in a small bowl with ½ cup of water, stir to dissolve seasoning and put aside until the turkey is done cooking. Pre-heat pan on medium high for about a minute, add 1 tsp olive oil or avocado oil to the pan to coat it. Add the ground turkey, mix and cook until crumbled and fully cooked (about 7 minutes). Once fully cooked, add the taco seasoning and stir until completely mixed in. Distribute chopped lettuce evenly among two plates. Add tomato, bell pepper, cucumber, onion, and corn. Top with turkey, green onions, and salad dressing. Add cilantro, avocado, and/or cheese if desired and enjoy!
