Veggie Omelette

Happy Sunday! Here’s on of my favorite breakfast recipes that’s quick and easy to make and FULL of FLAVOR!
Servings 2 omelettes


  • 6 eggs
  • 1/2 diced orange bell pepper
  • 1/4 diced Red onion
  • 1/2 cup broccoli chopped
  • 4 slices pepper jack cheese
  • 1 diced green onion (optional topping)
  • 1 tbl Butter
  • 1 tsp avocado oil
  • Salt & Pepper to taste


  • Add veggies to a sauté pan with 1 tsp avocado oil and cook for about 5-10 minutes or until veggies are soft. Then set aside.
  • Add 1/2 tbl butter to a nonstick pan and heat to a medium heat (I use ceramic pans which have been the best for non stick for me).
  • Add 3 eggs to a small bowl, beat eggs, then add to pan. Cook for a few minutes until eggs start to set, then tilt the pan to the side and let any of the uncooked egg run off to the side to cook through.
  • Add half the cooked veggies to the pan, making sure to keep veggies on just one half of the omelette so you can easily fold it. Add cheese, then fold omelette in half. .
  • Slide onto a plate, top with green onions, repeat the process for your second omelette. Add a side of diced tomatoes and avocado for extra veggie awesomeness, then enjoy!!
