Veggie Sausage Soup

The great thing about veggie soups…you can just throw in whatever you have on hand with some seasonings and it usually turns out pretty good!! I added riced cauliflower to this one which turned out perfect for a low-carb option. My guy actually thought it was rice when he tried it.
Servings 2 People


  • 2 tbl avocado oil
  • 1/2 diced Red onion
  • 2 sliced Carrots
  • 3 sliced Celery
  • 2 diced Zucchini
  • 2 cups Water
  • 2 sliced organic Italian sausages
  • 1 can Diced Tomatoes
  • 12 oz cauliflower rice (I get frozen cauliflower rice from Costco)
  • 1 cup Spinach (fresh or frozen)
  • 2 cloves garlic crushed
  • 1 tbl Italian seasoning
  • 1 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Salt
  • pepper
  • 1/8 tsp crushed red pepper


  • Add avocado oil and onion to a large soup pot, and sauté over medium heat for about 5 minutes while you chop the other veggies. Next add carrots and celery. Cook for another 5 minutes.
  • Next add remaining ingredients and bring soup up to a low boil. Cover and let simmer for 15-20 minutes. Then serve!
