Veggie Stuffed Bell Peppers
I used to think stuffed bell peppers were too complicated to make so I never tried but this recipe is SO SIMPLE and only takes a few minutes to prep.
Have a super flavorful dish on the table in no time!
Ingredients
Main Ingredients
- 4 bell peppers
- 1 tsp avocado oil
- 1/2 diced Red onion
- 1 can Black Beans
- 1 can Corn
- 1 cup cooked quinoa
- 1 diced Tomato
- 1 cloves garlic crushed
- 1/2 cup Shredded Mexican cheese
Seasoning
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp Garlic powder
- 1 tsp Oregano
- 1/2 tsp Onion powder
- 1/2 tsp Chipotle Powder
- 1/4 tsp Salt
Instructions
- Preheat oven to 375
- While oven preheats, add 1 tsp avocado oil to a pan, add onions and cook over a medium heat for about 5 minutes, add black beans, corn, tomato, garlic, quinoa, cheese, and spices. Mix well and cook for another couple minutes.
- Cut the tops off the bell peppers, remove the seeds, then stuff with veggie mix. Cook for 20 minutes, remove from oven and top peppers with a little more cheese, then cook for another 10 minutes or until soft. Broil for the last 30 seconds to a minute if you like your peppers a little charred. Just keep your eye on the broiler so it doesn't burn! Remove from oven, top with cilantro and enjoy!
