White Chicken Chili

This spicy and savory soup is perfect for those cold nights!! or any time really?!
Servings 4 People


  • 1 lb chicken (season with salt/pepper, garlic powder & cumin)
  • 1 diced bell pepper
  • 1/2 Red onion
  • 2 1/2 cup Chicken broth
  • 1/4 tsp Salt
  • 1/4 tsp Smoked chipotle powder
  • 2 tsp cumin
  • 1 tsp Italian seasoning
  • 3 cloves garlic crushed
  • 1 cup Corn
  • 4 tbl diced green chile (I have a jar of diced hatch chiles from Costco that I love)
  • 1/3 heavy cream
  • 1 cup Mexican cheese shredded


  • Green onions
  • Avocado


  • Add 1 tsp avocado oil to a pan and cook chicken over a medium heat a few minutes until browned, flip and cook another few minutes until done.
  • Shred chicken - set aside until ready to add to soup. . In a separate pan, cook onions and bell pepper over a medium heat until lightly browned.
  • Add broth, shredded chicken, seasonings, green chile, garlic, and corn. Simmer for 15-20 minutes. Add cream and cheese, heat for another minute then serve.
  • Great topped with avocado and green onions!
