White Chicken Chili
This spicy and savory soup is perfect for those cold nights!! or any time really?!
Ingredients
- 1 lb chicken (season with salt/pepper, garlic powder & cumin)
- 1 diced bell pepper
- 1/2 Red onion
- 2 1/2 cup Chicken broth
- 1/4 tsp Salt
- 1/4 tsp Smoked chipotle powder
- 2 tsp cumin
- 1 tsp Italian seasoning
- 3 cloves garlic crushed
- 1 cup Corn
- 4 tbl diced green chile (I have a jar of diced hatch chiles from Costco that I love)
- 1/3 heavy cream
- 1 cup Mexican cheese shredded
Toppings
- Green onions
- Avocado
Instructions
- Add 1 tsp avocado oil to a pan and cook chicken over a medium heat a few minutes until browned, flip and cook another few minutes until done.
- Shred chicken - set aside until ready to add to soup. . In a separate pan, cook onions and bell pepper over a medium heat until lightly browned.
- Add broth, shredded chicken, seasonings, green chile, garlic, and corn. Simmer for 15-20 minutes. Add cream and cheese, heat for another minute then serve.
- Great topped with avocado and green onions!
