Preheat oven to 400 degrees, cut zucchinis in half, scoop out some of the seeds so there’s enough room for your toppings, rub the cut zucchinis with a clove of garlic, spoon pizza sauce into each zucchini boat, top with mozzarella and whatever toppings you’d like. I used spinach, diced tomatoes, red onion on half of them and pepperoni on the other half. Bake in the oven for about 15 minutes or until cheese starts to brown. Broil for 1 minute to brown the cheese even more if you like it extra crispy like me 🙂
